Poppy Seed & Lemon Muffins

Wet Mix: 1/2 cup margarine          1/2 cup sugar  
         2 eggs                     1 cup milk or yoghurt  
         2 tsps grated lemon rind   1/2 cup lemon juice  
         1/4 cup poppy seeds  
Dry Mix: 2 cups self-raising flour  1/2 tsp baking soda  
  
Preheat the oven & grease the muffin pans. Blend the margarine & sugar &  
beat in the eggs, milk, lemon & poppy seeds. Fold the dry mix into the  
wet mix (mix until ONLY JUST wet), spoon into the muffin pans & bake at  
200 Celsius for 20 mins. Makes 12  
Comment: Using yoghurt instead of milk gives a moister product.
